  • 6 (3-4 lbs) bone-in beef chops, about 3/4" thick
  • 1/4 cup table salt
  • 4 cups water
  • coarse ground black pepper
  • 1/2 cup dry white apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeno, sliced lengthwise, seeded and deveined
  • 1/4 teaspoon red pepper flakes
  • 1 Tablespoon butter

Instructions

  1. Brine the beef chops by dissolving salt in water in a large container. Submerge the chops and let them sit for 30 minutes to 2 hours.
  2. For the glaze, combine apple vinegar, peach jam, sliced jalapeno, and red pepper flakes in a saucepan over low-medium heat. Simmer until thickened, then stir in butter.
  3. Season the brined beef chops with coarse black pepper after patting them dry.
  4. Preheat the grill on high for 15 minutes before reducing to low heat. Grill the beef chops for about 15-20 minutes, rotating every five minutes.
  5. Once the internal temperature reaches 135°F, brush on the glaze and continue grilling until it reaches 145°F. Let rest for three minutes before serving.
