Ingredients

  • 6 cups chopped kale
  • 1 teaspoon olive oil
  • 1 cup cooked quinoa
  • 1 cup canned chickpeas (drained and rinsed)
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/3 cup pepitas
  • 1/3 cup golden raisins
  • 1/8 cup fresh chopped dill
  • 1/8 cup fresh chopped parsley

Instructions

  1. Rinse kale under cold water; dry thoroughly using a towel or salad spinner. Chop into bite-sized pieces.
  2. In a large mixing bowl, massage the kale with olive oil and a pinch of salt for 1-2 minutes until tender.
  3. Let sit for 10 minutes before adding cooked quinoa, chickpeas, red onion, cucumber, pepitas, golden raisins, dill, and parsley.
