  • 1 lb boneless, skinless chicken breast
  • 1 tbsp fresh ginger, grated
  • Zest and juice of 1 lemon
  • 2 tbsp honey
  • 1 tbsp soy sauce (gluten-free if needed)
  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced red onion

Instructions

  1. Prepare the coconut rice by rinsing rice under cold water, then combining it with coconut milk, water, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until tender.
  2. Marinate the chicken by whisking together ginger, lemon zest and juice, honey, soy sauce, olive oil, salt, and pepper in a bowl. Add chicken pieces to marinate for at least 10 minutes.
  3. For the pineapple mango salsa, mix diced pineapple, mango, red onion, lime juice, cilantro (if using), salt, and pepper in a separate bowl.
  4. Cook the marinated chicken in a non-stick skillet over medium-high heat for about 6–8 minutes until cooked through.
  5. Serve over coconut rice topped with pineapple mango salsa.
