  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 15 oz canned chickpeas (drained and rinsed)
  • 12 oz chopped tomatoes
  • 56 oz seedless English cucumber (chopped)
  • 1/2 cup diced red onion
  • Fresh parsley (for garnish)

Instructions

  1. In a large shallow bowl, whisk together olive oil, red apple vinegar, balsamic vinegar, lemon juice, garlic (if using), Italian seasoning, salt, and pepper.
  2. Add the drained chickpeas, chopped tomatoes, cucumber, red onion, and fresh parsley to the marinade. Gently toss until evenly coated.
  3. Allow the mixture to marinate at room temperature for 30–60 minutes to enhance flavors.
  4. Serve chilled or at room temperature. Optionally top with crumbled feta cheese before serving.
