  • 1 can white (cannellini) beans (drained & rinsed)
  • 2 mini cucumbers (chopped)
  • 12 tablespoons red onion (chopped)
  • 1/2 red bell pepper (chopped)
  • 10 ounces little tomatoes (halved)
  • 1/3 cup Kalamata olives (pitted & chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 tablespoon red apple vinegar
  • Salt & pepper to taste

Instructions

  1. Prepare the ingredients by chopping the cucumbers, red onion, red bell pepper, and halving the tomatoes.
  2. In a large mixing bowl, combine the drained white beans, chopped vegetables, Kalamata olives, fresh parsley, and oregano.
  3. Drizzle olive oil and red apple vinegar over the mixture; season with salt and pepper. Toss gently to combine.
