  • 1/2 cup cotija cheese or a plant-based alternative
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise (or vegan mayo)
  • 1/4 cup sour cream (or plant-based alternative)
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and let cool.
