  • 1 pound beef tenderloin (cut into small cubes)
  • 1 tablespoon olive oil
  • 1 cup finely chopped mushrooms (cremini or button)
  • 2 tablespoons finely chopped shallots
  • 2 cloves minced garlic
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 package puff pastry (thawed)
  • 1 egg (beaten for egg wash)
  • Flour for dusting

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium-high heat. Season beef with salt and pepper, then sear for 2-3 minutes on each side until browned. Remove from heat and let cool.
  3. In the same skillet, sauté mushrooms, shallots, and garlic until golden brown (about 5-7 minutes). Stir in thyme and season with salt and pepper. Allow to cool.
  4. Roll out puff pastry on a floured surface to about 1/8 inch thick and cut into 3×3 inch squares.
  5. Place a spoonful of mushroom mixture on each square, add a piece of beef on top, then fold over the pastry and seal edges with a fork.
  6. Brush each bite with beaten egg for a golden finish.
  7. Bake for 15-20 minutes until golden brown.
