  • 1 tablespoon sugar
  • 1 1/2 cups warm water
  • 1/4 cup baking soda
  • 8 ounces mozzarella cheese (cut into cubes)
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Gradually add this to the yeast mixture until combined.
  3. Knead the dough until smooth and elastic (about 5 minutes with a mixer or 8 minutes by hand). Incorporate chopped rosemary and Parmesan.
  4. Place dough in a greased bowl; cover and let rise for about 1 hour until doubled in size.
  5. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down dough, divide into 8 pieces, flatten each piece, place a mozzarella cube inside, seal around it.
  7. Shape each ball into a rope and twist into pretzel shapes on the prepared sheet.
  8. Boil water in a saucepan; add baking soda. Boil each pretzel for about 30 seconds before draining on paper towels.
  9. Brush with melted butter and sprinkle with sea salt before baking for 12-15 minutes until golden brown.
