  • 1 1/2 cups long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes (optional)
  • 1 pound shrimp (peeled and deveined)
  • 2 green onions (chopped)
  • Fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
  2. Stir in chopped onion, bell peppers, celery, and minced garlic; sauté until softened, about 5–7 minutes.
  3. Add rice to the pot, coating it well with the mixture. Sprinkle in Cajun seasoning, smoked paprika, dried thyme, and cayenne pepper if desired.
  4. Pour in chicken broth and diced tomatoes (if using). Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
  5. Stir in shrimp, cover again, and cook for an additional 5–7 minutes until shrimp are pink and cooked through.
  6. Remove from heat; fluff rice with a fork. Season with salt and pepper as needed before garnishing with green onions and parsley.
