  • 15 oz dark red kidney beans (drained and rinsed)
  • 15 oz cannellini beans (drained and rinsed)
  • 1 small yellow onion (diced)
  • 2 medium carrots (diced)
  • 3 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 29 oz diced tomatoes
  • 15 oz tomato sauce
  • 1 cup beef broth
  • 8 oz Ditalini pasta

Instructions

  1. In a large Dutch oven, brown the ground beef over medium heat for about 7 minutes until fully cooked.
  2. Drain excess grease, then add diced onion, carrots, and celery. Sauté for about 10 minutes; add minced garlic and cook for an additional 1-2 minutes.
  3. Stir in diced tomatoes, tomato sauce, beef broth, and seasonings. Simmer on low heat for about 20 minutes.
  4. Cook Ditalini pasta in a separate pot according to package instructions until al dente. Drain and set aside.
  5. Just before serving, mix the drained pasta into the soup. Garnish with fresh basil if desired.
