  • 1/2 cup (68g) cornstarch
  • 1/4 tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (68g) powdered sugar
  • 1/2 tsp peppermint extract
  • 2 Tbsp (28g) salted butter, softened
  • 2 Tbsp half and half
  • 1/4 tsp peppermint extract
  • 1 1/2 cups (200g) powdered sugar
  • 1/4 cup (42g) finely crushed peppermint bits or candy canes

Instructions

  1. In a bowl, whisk together flour, cornstarch, and salt; set aside.
  2. Cream softened unsalted butter with powdered sugar in an electric mixer until combined. Add peppermint extract.
  3. Gradually mix in the dry ingredients until just combined. Chill the dough for one hour.
  4. Preheat oven to 350°F (175°C). Shape dough into balls and place on ungreased baking sheets.
  5. Bake for 10-13 minutes until lightly golden; cool on wire racks.
  6. For frosting, cream salted butter, half and half, peppermint extract, and powdered sugar until fluffy. Frost cooled cookies and sprinkle with crushed peppermint.
