  • 2 garlic cloves (minced)
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • 1/4 cup green onions (chopped)

Instructions

  1. Heat oil in a skillet over medium heat. Sauté diced chicken until fully cooked, then remove from pan.
  2. In the same skillet, briefly sauté minced garlic until fragrant, then add soy sauce, pineapple juice, honey, and vinegar.
  3. Stir in cornstarch mixed with water to thicken the sauce as it cooks.
  4. Return cooked chicken to the pan along with pineapple chunks and diced bell pepper; mix well.
  5. Add cooked rice and heat everything through until warmed.
