  • 1 1/2 cups powdered sugar
  • 23 tbsp reserved pineapple juice
  • Optional: 1 tbsp melted butter for richness
  • Optional: 1/4 tsp pineapple or vanilla extract for flavor boost

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a Bundt pan.
  2. In a large bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  3. Stir in vanilla and optional pineapple extract. In another bowl, whisk flour, baking powder, and salt; gradually add to creamed mixture along with sour cream.
  4. Fold in crushed pineapple until combined.
  5. Pour batter into prepared pan and bake for 75-85 minutes or until a toothpick comes out clean.
