  • 1 3.4 oz. box instant pistachio pudding
  • 4 eggs
  • 1/4 cup vegetable oil
  • 2 tbsp. water
  • 1 cup sour cream
  • 3/4 cup maraschino cherries (halved)
  • 2 cups powdered sugar
  • 22 1/2 tbsp. milk
  • 1 tsp. almond extract
  • green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F and grease two small loaf pans.
  2. In a mixing bowl, combine the yellow cake mix and pistachio pudding. Add eggs, vegetable oil, water, and sour cream; beat until smooth.
  3. Fold in the halved maraschino cherries.
  4. Divide the batter between the greased loaf pans and bake for 35-40 minutes or until a toothpick comes out clean.
  5. Allow the loaves to cool before preparing the glaze by whisking together powdered sugar, milk, and almond extract.
