  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted, plus more for pan)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup
  • 1 cup heavy cream

Instructions

  1. 1. In a blender, combine flour, sugar, salt, cinnamon, ginger, nutmeg, milk, pumpkin puree, eggs, melted butter, and vanilla. Blend until smooth and let rest for 30 minutes.
  2. 2. Heat a nonstick skillet over medium heat and lightly coat with butter. Pour ¼ cup of batter into the skillet, tilting to coat evenly.
  3. 3. Cook for 1 to 1½ minutes until golden brown on the bottom; flip and cook for another minute. Repeat with remaining batter.
  4. 4. For the filling, whisk together cream cheese, confectioners' sugar, maple syrup, and heavy cream until fluffy.
  5. 5. Fill each crepe with the maple cream cheese mixture, fold over, and serve warm.
