  • 1 cup mascarpone cheese
  • ¼ cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup packed light brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of cloves
  • Pinch of coarse kosher salt
  • 1 (15-ounce) can pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C). If using a store-bought spelt crust, place it in your pie dish. If making from scratch, roll it out and transfer it to the dish.
  2. In a large mixing bowl, combine the room temperature mascarpone cheese and granulated sugar with two of the eggs. Mix until smooth using an electric mixer or whisk.
  3. Add the remaining ingredients: vanilla extract, brown sugar, cinnamon, nutmeg, cloves, and pumpkin puree. Mix until fully combined.
  4. Pour the filling into the prepared crust and smooth it out evenly.
  5. Bake for about 1 hour and 15 minutes or until set in the center. A knife inserted should come out clean.
  6. Allow cooling at room temperature for at least one hour before serving. Top with extra swirls of mascarpone if desired.
