  • 500 g pumpkin (3 cups), diced
  • 2 garlic bulbs
  • 2 sprigs rosemary
  • 3 tbsp olive oil (extra virgin)
  • 1/2 cup white apple vinegar
  • 2 cups small pasta
  • 3 cups chicken or vegetable stock
  • 50 g parmesan cheese (grated)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Slice the tops off the garlic bulbs and place them in a large oven-proof dish with diced pumpkin and rosemary. Drizzle with olive oil, season with salt and pepper, and roast for about 45 minutes until soft.
  3. Once roasted, let garlic cool before squeezing out the cloves into a large pot. Add roasted pumpkin and remaining rosemary leaves.
  4. Pour in chicken stock, white apple vinegar, and pasta. Bring to boil, then reduce heat to medium for about 15 minutes until pasta is cooked and liquid absorbed.
  5. Stir in grated parmesan cheese until well mixed and serve immediately.
