  • 2 cups dry sushi rice
  • 1 1/2 lb salmon fillet
  • 8 oz imitation crab meat (chopped)
  • 1/2 cup Japanese mayonnaise
  • 4 oz cream cheese (softened)
  • 1 Tbsp sriracha
  • 2 Tbsp furikake
  • Green onion (for garnish)
  • Salt & pepper to taste
  • 1/2 tsp garlic powder
  • Low sodium soy sauce
  • Roasted seaweed
  • English cucumber slices
  • Avocado slices

Instructions

  1. Rinse and cook sushi rice according to package instructions.
  2. Season the salmon with salt, pepper, and garlic powder, then bake at 400°F for 15-20 minutes until cooked through.
  3. In a large bowl, combine baked salmon (flaked), chopped imitation crab meat, Japanese mayonnaise, softened cream cheese, sriracha, and low sodium soy sauce; mix well.
  4. Layer the cooled sushi rice in a baking dish and top with furikake. Spread the salmon mixture evenly on top.
  5. Broil for about 4 minutes until slightly crispy and heated through.
  6. Garnish with green onion and serve with roasted seaweed and vegetable slices.
