  • 4 cups chopped romaine lettuce
  • 2 sliced hard-boiled eggs
  • 1 cup halved cherry tomatoes
  • 1 sliced avocado
  • 1/2 thinly sliced cucumber
  • 1/4 cup thinly sliced red onion
  • 1 cup mayonnaise
  • 1/4 cup ketchup
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red apple vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a mixing bowl, combine mayonnaise, ketchup, lemon juice, red apple vinegar, salt, and pepper. Whisk until smooth and chill in the fridge.
  2. On a serving platter or individual plates, arrange a bed of chopped romaine lettuce.
  3. Layer on cooked shrimp followed by hard-boiled eggs, cherry tomatoes, avocado, cucumber, and red onion.
