  • 2 lbs ground beef
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 1215 large fresh basil leaves
  • 1¼ cup shredded mozzarella cheese
  • Marinara sauce (for serving)

Instructions

  1. Preheat oven to 350°F.
  2. Sauté onion and red bell pepper in olive oil until softened; add garlic and cook until fragrant. Let cool.
  3. In a mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, pepper, parsley, and cooled vegetable mixture. Mix until just combined.
  4. Shape the mixture into an 8"x15" rectangle on parchment paper. Layer with basil leaves and mozzarella cheese.
  5. Roll the meatloaf jelly-roll style using the parchment paper for guidance; seal the edges tightly.
  6. Place on a baking sheet lined with parchment paper and bake for about 1 hour. Let rest for 10 minutes before slicing.
