  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine beef cubes with vinegar, salt, black pepper, Italian seasoning, and smoked paprika. Toss to coat evenly.
  2. Place halved baby potatoes at the bottom of the slow cooker. Drizzle half of the melted butter and olive oil over them; sprinkle minced garlic on top.
  3. Layer the seasoned beef on top of the potatoes and drizzle with remaining melted butter and olive oil.
  4. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours until beef is fork-tender.
