  • 1/2 tsp kosher salt
  • 565g All-Purpose Flour
  • 100g Unsalted Butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g Unsalted Butter
  • 80g Granulated Sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp Kosher salt
  • 1 Tbsp Corn starch
  • 125g Pecan Halves
  • 190g Unsalted Butter, at room temperature
  • 280g Brown Sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp Kosher salt
  • 115g Unsalted Butter, at room temperature
  • 225g Cream Cheese, at room temperature
  • 250g Powdered Sugar, sifted
  • 12 Tbsp Heavy Whipping Cream
  • 1/2 tsp kosher salt

Instructions

  1. Activate yeast by combining lukewarm milk with sugar and yeast. Let sit until frothy.
  2. Mix in eggs and salt; gradually add flour to form a soft dough. Knead in unsalted butter until smooth.
  3. Cover the dough and let it rise in a warm area for about 1 hour.
  4. Prepare the apple filling by cooking diced apples with butter, sugar, cinnamon, salt, and cornstarch until softened.
  5. Roll out the dough into a rectangle; spread softened butter and sprinkle with brown sugar and cinnamon. Distribute apple filling evenly.
  6. Roll into a log shape and cut into 12 equal pieces.
  7. Arrange on a baking sheet lined with parchment paper; let rise for another 30 minutes.
  8. Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown.
  9. For the frosting, combine cream cheese and powdered sugar; add heavy whipping cream to achieve desired consistency.
