  • Fine sea salt and freshly ground black pepper, to taste

Instructions

  2. Stir in the smoked paprika, then add the stale bread, tossing gently for another 3 minutes.
  3. Pour in 6 cups of chicken stock or vegetable broth, stirring well to combine and breaking down the bread as it softens.
  4. Bring the mixture to a strong simmer. Gradually pour in whisked eggs while stirring continuously to create delicate ribbons.
  5. Season with salt, pepper, and more smoked paprika if desired. Adjust consistency with additional stock if needed.
