Ingredients

  • 150g sirloin or ribeye steak
  • 2 large eggs
  • Avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil or butter
  • Salt & freshly cracked black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the steak dry and season with salt and pepper. Heat olive oil or butter in a skillet over high heat. Sear the steak for 2-3 minutes per side until medium-rare. Let it rest before slicing.
  2. In the same skillet, reduce the heat to medium. Add more oil if necessary and crack the eggs into the pan. Cook until the whites are set and yolks are still runny (about 2-3 minutes).
  3. Assemble slices of avocado, halved cherry tomatoes, sliced steak, and sunny-side-up eggs in a serving bowl.
  4. Garnish with chopped parsley and a pinch of salt and pepper. Serve immediately.
