  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 2 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • Sea salt flakes for garnish
  • ½ cup butter for caramel sauce
  • 1 cup brown sugar for caramel sauce
  • 1 cup cream for caramel sauce
  • 1 teaspoon kosher salt for caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C) and butter an 11 x 8-inch casserole dish.
  2. In a small bowl, combine chopped dates with baking soda. Scald the milk in a saucepan and pour over the dates; let cool for about 15 minutes.
  3. In one bowl, mix flour, baking powder, and salt. In another bowl, beat eggs, then combine with brown sugar, butter, and vanilla in a food processor until smooth.
  4. Gradually add flour mixture into the processor while running on low speed. Add soaked dates and blend until smooth.
  5. Pour batter into the prepared dish and bake for approximately 30 minutes until set.
  6. While baking, prepare the caramel sauce by melting butter in a saucepan, then stirring in brown sugar and salt until dissolved. Gradually add cream and simmer until thickened.
  7. Once baked, poke holes in the cake and pour some caramel sauce over it to soak in.
  8. Let sit for about 15 minutes before serving with additional caramel sauce and whipped cream.
