  • 4 cups frozen strawberries
  • 1 cup granulated sugar
  • 1/2 cup water
  • 2 liters strawberry shortcake ice cream
  • 3 cups crushed vanilla cookies
  • 1/2 cup melted butter
  • 2 tablespoons corn starch

Instructions

  1. Prepare the strawberry sauce by combining frozen strawberries, sugar, and water in a saucepan. Boil over medium heat, stirring occasionally.
  2. Mix corn starch with a little water until smooth and add it to the saucepan. Stir until thickened; then remove from heat and let cool.
  3. Combine crushed vanilla cookies with melted butter in a mixing bowl. Press this mixture into the bottom of a springform pan.
  4. Spread half of the softened strawberry shortcake ice cream over the cookie base, then pour half of the cooled strawberry sauce on top. Repeat layers.
  5. Cover with plastic wrap and freeze for at least 4 hours or until solid.
