  • 400g pasta (rotini or penne recommended)
  • 2 roasted corn cobs
  • 3 green onions
  • 1 shallot
  • 2 jalapeños
  • ½ cup cilantro
  • 1 cup cotija cheese
  • 1 cup sour cream
  • ½ cup mayo
  • 3 cloves garlic
  • juice and zest of 1 lime
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Roast the corn in a frying pan with olive oil until charred (10-15 minutes). Remove kernels.
  2. Boil salted water in a large pot and cook pasta until al dente; strain and toss with olive oil.
  3. Prep vegetables by slicing green onions and mincing shallot, garlic, jalapeños, and cilantro.
  4. Mix dressing ingredients in a bowl.
  5. Combine pasta, roasted corn, veggies, cotija cheese, and dressing in a big mixing bowl. Stir well.
