  • 35 chocolate creme cookies
  • 5 tbsp unsalted butter
  • 24 oz full-fat cream cheese
  • 8 oz mascarpone cheese
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • ½ cup heavy cream
  • 1 cup sour cream
  • 12 ladyfinger biscuits
  • ½ cup strong black coffee

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a springform pan by buttering the base.
  2. For the crust, blend chocolate cookies with melted butter until fine crumbs form. Press into the bottom of the pan and bake for 7–8 minutes.
  3. In a stand mixer, combine cream cheese, mascarpone, sugar, vanilla essence, and salt until smooth. Add eggs one at a time, mixing gently.
  4. Incorporate heavy cream, sour cream, and sifted cornstarch until just combined.
  5. Pour half of the cheesecake batter over the cooled crust. Quickly dip ladyfingers in coffee and layer them over the batter before adding the remaining cheesecake mixture.
  6. Bake in a water bath at 320°F (160°C) for about 80 minutes or until edges are firm but center remains jiggly.
  7. Cool at room temperature for 15 minutes before refrigerating overnight.
  8. Top with whipped mascarpone and cocoa powder before serving.
