  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic or chicken sparkling grape juice vinegar
  • 1 tablespoon honey
  • 1/2 shallot, finely chopped
  • 1 clove garlic, grated
  • 1 teaspoon lemon zest
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • red pepper flakes
  • kosher salt and black pepper
  • 1 1/22 cups cherry tomatoes, halved if large
  • 23 peaches, sliced into wedges
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese, at room temperature
  • 1/4 cup toasted pumpkin seeds (or other nut/seed)

Instructions

  1. In a glass jar, combine the vinaigrette ingredients: olive oil, vinegar, honey, finely chopped shallot, grated garlic, lemon zest, and herbs. Whisk until smooth.
  2. In a large mixing bowl, toss together halved cherry tomatoes, sliced peaches, and pitted cherries with one-third of the vinaigrette. Allow to marinate at room temperature for 15 minutes.
  3. Break burrata into pieces over the salad and drizzle with remaining vinaigrette. Top with toasted pumpkin seeds and additional herbs if desired.
