  • 1/2 cup dry quinoa
  • 3/4 cup water
  • 23 cups chopped/sliced tomato
  • 15 oz can chickpeas (drained and rinsed)
  • 1/4 cup chopped green onion
  • 1 TBSP fresh chopped parsley
  • 1/4 cup fresh lime juice
  • 2 TBSP avocado oil
  • 1 clove garlic (minced)
  • 1/2 tsp ground cumin
  • 1/4 tsp sea salt
  • 1/8 tsp pepper

Instructions

  1. Rinse quinoa under cold water using a mesh strainer to remove bitterness. Toast it lightly in a small pot for added flavor.
  2. Add water to the pot and bring it to a boil. Reduce heat and simmer covered for about 12-13 minutes until all liquid is absorbed.
  3. While the quinoa cooks, chop tomatoes and green onions, then drain and rinse chickpeas.
  4. In a mixing bowl, whisk together lime juice, avocado oil, garlic, parsley, cumin, sea salt, and pepper for the dressing.
  5. Allow quinoa to cool slightly before fluffing with a fork in a large bowl. Combine cooled quinoa with tomatoes, green onion, chickpeas, and half of the dressing. Toss well.
  6. Serve immediately or refrigerate until ready to enjoy.
