  • 2 medium sweet potatoes, peeled and diced
  • 12 ounces short pasta (rigatoni, penne, or fusilli)
  • 4.2 ounces goat cheese, crumbled
  • 1/4 cup heavy cream
  • 20 fresh sage leaves
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Grated parmesan cheese for topping (optional)
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 430°F. Toss the diced sweet potatoes and minced garlic with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20 to 25 minutes until tender.
  2. In a large pot of salted water, cook the pasta according to package directions until al dente. Reserve about 2/3 cup of the cooking water before draining.
  3. In a skillet over medium heat, add the remaining olive oil and butter. Fry the sage leaves for 1 to 2 minutes until crispy; remove with a slotted spoon.
  4. Add roasted sweet potatoes to the skillet and mash half while keeping some chunks intact.
  5. Stir in cooked pasta, heavy cream, crumbled goat cheese, and reserved pasta water until creamy; season with salt and pepper.
  6. Serve topped with crispy sage leaves, grated parmesan cheese, and crushed red pepper flakes if desired.
